If a client has "favorited" a bunch of images - is there a way for either the client or the admin to move all those favorites into a cart without having to go back to them one at a time?

If they are going to be purchased the same product for each photo (all as a download, 4x6, etc...) you can create a Buy All. Add that buy all to the price list of the gallery.
If you only want the buy all available when purchasing from favorites, edit the product group the buy all is in and check the option "If this product group includes Buy Alls, ONLY offer when a customer is ordering from favorites."
