Editing The Theme For Album Proofing

I guess I'm missing something obvious, but where do I edit the theme that's used for album proofing? The section has a little icon next to it saying "Using different theme" but there's no indication which one or where I can change it.
I'm sure I've done this in the past but I can't for the life of me find where.
