Can you have multiple calendars in sytist.  I have an event with two different photogs - that need separate calendars.  So if photog "A" has an appointment at 11:00am - It wont let photog "B" book that same time?

Not an option for multiple calendars.

If you want to be  able to book different services at the same time, click the "Override booked times from other services" option for each one.

Ok that works!!  One more question - I have made an "unavailable" lunch hour - should it block that out for BOTH of those "services" - for some reason its not - so I am not sure if that override booked thing - overrides lunch block out as well?

It will override any other bookings, including your lunch  blockout. You will have to add a entry for the date and time for that same booking service to block it out.
