Disable Payment Not Working

Before Christmas I did pet photos with Santa for an SPCA fundraiser. The participants had the option to purchase additional images, but because all of those funds were going to the SPCA I didn't want any of the money lost to credit card processing fees.
I disabled Stripe for that gallery, so the only payment option would be offline/etransfer, however some people still managed to pay by credit card and I don't know how this happened. Is there another step required to disable the payment?
When I go in to make a purchase as a visitor, I only see the offline payment option so I'm having a hard time understanding how they would get linked into Stripe.

This already happened to me years ago, but with PayPal ,then with an update (I don't remember which one)the problem was solved.

I don't know why they would be offered a payment option if it is disabled. If you can tell me a couple of order numbers I can take a look.

Marco, I'm not sure. I just started using Sytist in the past few months so I would guess that it is up to date.
Tim, Order #10131 paid with MC and Order # 10127 paid with Visa, both through Stripe.

They placed the order with the off line option, but then paid the invoice with the credit card after that. There will be a pay now button for offline orders.
I can add to the config file an option to not show pay now button on orders placed with pay offline payment option, which also means they can't pay later with credit card if they change their mind.
