I would like to have the payments listed in the order that I need, when I add Stripe as a payment method it comes before PayPal and I would like Paypal first and auto selected if that is possible.

When you edit payment options, there is an option for "Display Order". Adjust the display order values to the order you want them displayed.

I cannot figure out how to do this. I see the page where is says 'display order' and 'if you are using more than one payment method, the display order defines in what order the payment options show. From lowest number, left to right" along with a box with a number inside. But I don't see how to know which number puts 'credit/debit' first. I've tried just randonmly changing the number, but google pay keeps coming first

That is if you were offering PayPal and Square and Pay offline for example.
There is not a way to change the display order of the PayPal Complete Payment payment options.
