Hi Tim,
Is there a way to remove the 'no mat' option? Or an option to remove the Matting (white square, black square) completely?

There is not a way to remove the no mat option unless the mat options are removed from the frame.
To remove the mat option from your frames, Photo Products -> Wall Designer -> Frames -> Click on the frame name then scroll down to the bottom of unselect the mat options.
