I rather like the Gallery Exclusive mode, but how do I link my product shop ('Store') from it?

If you mean adding a link to a different page, you would have to add it to the description of the gallery.

Rob, you can use page designer and elements that way. try it out.

Yes you can insert a link anywhere with the page designer, but this is basic page navigation which really should be in the menu IMO.
In addition, once you're on the 'Store' page there's no way back to the gallery you originally came from.
