Hi,
I know I have done this before and right now I can't recall how it did it.
How can I create text pages and add them to, say, an information section.
I think I used the blog page before but I do not want it in the blog section.
I also want to create pages that I can link to but are not visible except through the link.

Do you already have your information section set up?
You could do...
Site Content > Create New Section > Standard Pages > [Name The Section] > Add New Page
From there you can use the page designer to get a nice layout for your text blocks. And have the page status set to Draft if you don't want it listed with your other content.

if I set a page to draft, will I be able to put a link to it from a live page? I assume not.
I would like to have a section that is not displayed on the site menu structure but I can link to the pages therein. I do not want people viewing the site to be able to get to the pages in this section, unless I link to them.
I have done it before but I cannot for the life of me remember how I did it.
I think you ar right. The standard page section is the way to go. And maybe, remove the section from the main menu. That should do it.

Draft pages are live, but people will only see them if they have the link to get to them.
Draft: Not listed in the section. Still can be access by direct link, but not listed with other content
Publish: Active page / gallery and listed on the site.
Pre-Register: Will be listed on the website, but when viewed, it will show a form for people to fill out (email address) to be notified when the page / gallery becomes available.
Closed: Similar to draft, but can not be accessed by direct link. Only you when logged into the admin can view the page / gallery.
