Is there a way to either add in the facebook conversion tracking script, or set a custom URL to divert people to once they have completed the booking process with online booking. Just trying to see if I can track my ROI for facebook ads for Christmas minis.

If it is script code they say to add to the HEAD section of your site, you can add the code in the Design -> Header & Footer -> Head Code area.
There is not a way to redirect to a specific when they complete a booking.
