How can I adjust the thumbnails so they don't appear cropped?
I would like the full photograph visible in these sub gallery thumbnails.

You would need to change the page listing display for the section your galleries are in.
In the Site Content section of the admin, in the left menu click "edit" under the Section/Category your galleries are in.
Then click "Layouts" then "Page Listing Layout" and change that to "Thumbnail".
