I am a new user. Once I have assigned a page to a section/category and it is accessible in the drop down menu of the category, I don't see a way to move it to a different drop down menu to change the structure of the site.

You can edit that page and click the Category option below the text editor to change the category for it.

Thank you Tim. I now have moved the pages to the new Category. The category (Information) is listed in the main menu, however a drop down menu does not occur giving clients access to the pages in the category. Where do I edit what items will show in the main menu section? I think there needs to be a video dedicated to menus management!

When editing a link for a section or category in the menu in Design -> Menu Links, click the "more options" link and you will see the option to create a dropdown menu.
You can select to have categories or pages in that section/category as dropdown menu items or create your own links for the dropdown menu.
