I'm searching for a setting to hide the total images posted on a gallery. Is there such option under photo display settings?

If you mean the total photos that shows in the list of galleries, go to Design -> Page Display & Content Listing Layouts.
Click "Thumbnail" under Content Listing Layouts.
Remove this line of code:
<?php listingTotalPhotosRow($page); ?>
Click "Thumbnail" under Content Listing Layouts.
Remove this line of code:
<?php listingTotalPhotosRow($page); ?>
