Watch Folder

I'm on the way to upgrade to 2.8,I have two questions that will not affect my decision anyway, but I would like to understand it a bit more.
Regarding the watch folder I red how to proceed, but it is not clear to me if there is any possibility to automatically create the subfolders as it is in the normal ftp uploading process.
For instance, if I'm on a dance competition I create the watch folder and the corresponding gallery, but if on my desktop I create different folders by competitor name, if I place them in the watch folder the photos they contain will go all in the main gallery folder, with no the sub.gallery structure I have on my site, correct ?
My thinking is based on how the FTP upload works now, where if you have to create the subgallery tree on the server you should place that tree in a container folder.
Maybe I'm not completely clear but I hope you will understand.
The second is just on the site designer, just to know if it possible to have a menu' on the left and not on the top.

The watch folder will do sub galleries just like the FTP process does.
There isn't an option to have a main menu on the left side.
