I wanted to leave some session available for booking, however, I don't want clients to be able to book, I just want them to call to schedule.
Is there a way to set up a "booking" so it shows up on my list, but not allow them to actually book?

You would need to create a separate page for that. If you add something to the booking calendar section, then it is going to offer them to book. You could create a top level page and add a form to it to contact you to book.
