How do I stop the preview image or first photo in the gallery from opening automatically when a page is clicked?

Sounds like you are using the Gallery Exclusive mode

When editing the gallery in the admin, click the option for gallery exclusive and there is an option for "do not display opening full screen photo"

The photo is popping up even on standard pages. Also, the thumbnail gallery is being displayed before the text. In my other Sytist the text shows first and then the thumbnails show after. This is one of my top level pages:

On that page, you have one photo upload to the photos section. And you have the Photo Display Settings set to thumbnail gallery. When there is only 1 photo in a thumbnail gallery, it automatically opens that one photo in the viewing window.
Looks like you really don't need that one photo in the gallery unless you plan on adding more. So you can either delete it from the Photos tab, upload additional photos, or in the Photos tab click the Photo Display Settings and set it to something else, like a slide show.
To arrange which shows first, you will need to edit the page display layout. Go to Design -> Page Display & Content Listing Layouts. Under Page Display Layouts, click Standard Page.
