Since we do not permit digital downloads, preferring to delivery digital files by email, I can not select "download" to avoid shipping being added an image only product.
In photocart you offered: "product that is not downloadable, but will be delivered digitally." in the product setup.
How is this accomplished in Sytitst?

I do the same. How I set it up is I selected the "Other" category, and checked "do not allow download until I approve it," and checked "do not calculate shipping." Then I had to go into the default emails under Settings, and rewrite them to let them know the images will be emailed. I also set up an email message to send after I emailed the photos (which archives the order at the same time) to let them know the image has been emailed and to check their Spam folder if they haven't received it. (Since that often happens!)
One drawback is that this won't prevent somebody from accidentally ordering 2 digitals of the same photo - but I just deal with that when it (rarely, but occasionally) happens.

Make sure you're in `Product Base` rather than `Price Lists,` then click the name of the product, and a whole page of options should pop up, including that one.
