Turning Off Portions Of Days When You Have "standing Appointments " Available

We have been using the calendar for appointment for our Grads with quite a bit of success this fall and are very pleased.
Now something has cropped up that I need to figure out how to get around/adjust/change.
We have set every Mon, Tues and Thurs from 2pm to 6pm for appointments.
I set those up on an all the time basis..every month.
I am getting a few conflicts with some other stuff we also have to do. How can I block off some of time for just ONE afternoon, one day?
You can see on this photo we went in and manually booked several fake appointments to close off the time
Any suggestions.
Would events be a way around this?

To block out some time you would basically make an appointment in the calendar for day and time you want to block out. So if you needed to block out 2:00 - 4:00 on the 15th, enter in an appointment on the 15th at 2:00 for 2 hours.
