Afternoon Tim,
What im wanting to do is sell a Calendar for 2019 and get people to pre-order it ready for dispatch in Nov/December.
How could I achieve this?

You can create a store section and create a product for it in that section:

Ill look at adding the calendar to its own sales page instead of adding it via the stock site.
