Currently, most emails are signed off with the [WEBSITE_NAME] replace code. This is a bit impersonal. I could go in and change all the templates to my name, but is there a replace code that could be used here? I think if I change the website name it would cause a few other problems!

There is not a replace code to do that. You would have to go into each default email and change it in there.

How about adding a name shortcode?

There currently is not an option for that. But you can go to Settings -> Default Emails -> Header & Footer and you could add it to the footer section of all the emails. But you would still need to edit those default emails and remove [WEBSITE_NAME]
