Hi there,
I would like to add some text (instructions) above the checkout page content.
Can i do that into the backoffice or should i edit a specific page ( wich one ) ?

There is not an option to for additional text on the checkout page.
You would have to edit the file sy-inc -> store -> store_checkout.php around line 653.
