Am I right in thinking that I make a coupon and create a code and then just send the code to people by email? I doesn't work like Early Bird. Also how do I disable early bird on a gallery? Thanks

For someone to use a coupon, you would need to give them the coupon code somehow.
To remove an early bird special you added, edit it from the gallery and set the date to the past.
