Lookin > Settings > Photo Settings to see what the final image sizes have been set to.
I set the "Large max image width" the same size as the largest pixel width of my camera file.

For your download product, set the download dimensions to 0 so it downloads the original file you uploaded. Settings -> Photo Products -> Product Base.

When uploading images do photo settings need set, at least, to the size of the largest image, or does Sytist always upload and retain the original file, even when the photo settings are set to something different?

Sytist retains the original file to create downloads from. The Photo Settings just effects the size of the photos displayed on the website.
