I am creating a gallery for a one off client and would like to use gallery exclusive.
Can I either remove or choose which subgalleries are shown in the top menu?
Every time I add a sub gallery it appears in the top but it isnt what I want to display

There is not a way to not have certain sub galleries not shown in the menu. All the sub galleries are going to show there.

Just checking in for any updates on this? Will there be an option not to list the sub galleries in gallery exclusive mode? I'll have 200+sub galleries so will be a bit messy but I otherwise love the look of exclusive mode.

There just is no option to not have sub galleries listed in gallery exclusive mode.
